The Pyrenean flakes
They are made of fine chocolate coated with a thin crispy and sugary layer. They were recently created. These sweets are for sale in the town’s confectioner’s and shops.
The boiled sweet (Berlingot)
At the time of Napoleon III these sweets were made with hot springs, considered by the people who take the waters as a pleasant complement to the water cure. |
The “spit” cake
This cake was brought back from the Balkans in the 19C by the conscript peasants enrolled in the Empire’s army and it quickly infiltrated our countries becoming the compulsory cake for festivals and weddings. It is made from a pancake pastry, with extra eggs, butter and sugar and is cooked on a spit for several hours, in front of the burning embers of the hearth, on top of a cone which has a 12 to 20cm base and is 30 to 60cm long.
